Asparagus season is here and this means great deals on this sometimes expensive vegetable. I bought 2.5 pounds of asparagus and came home to find that my husband had also bought 2.5 pounds! So soups, salads, pastas and sandwiches all include asparagus right now. For most recipes I roast or steam it, but this one is totally raw. Raw asparagus certainly sounds intimidating, but I promise you this shaved asparagus salad is crisp yet tender and allows the great flavor of asparagus to take center stage.
This easy dressing also works well on steamed asparagus or any salad. It was so good, I took to just eating with with a spoon! Using fresh squeezed lemon juice with a good quality olive oil makes for a divine dressing that will be a frequent visitor to our table. I think my family is getting a tad spoiled (yes it’s MY fault) with only homemade dressing and croutons. I just can’t seem to buy the bottled stuff anymore, and it only takes a minute to whip up a great dressing. Try it, you’ll like it 😉
Ingredients: 4 servings
1 pound large stalk asparagus
8 ounces firm tofu- crumbled
1/4 cup Italian parsley – roughly chopped
dressing:
1/4 cup fresh lemon juice
1/2 cup olive oil
1 1/2 teaspoon light agave
1 teaspoon dijon mustard
salt and pepper
Method:
with a mandolin, knife or vegetable peeler shave of long lengths of asparagus. in a jar or bowl with whisk, combine dressing ingredients and mix well. pour over shaved asparagus, add tofu and parsley and toss to mix. serve immediately.
