Yup, these little devils are very popular around the holidays. But since we don’t eat eggs, I wanted to make something fun to take their place ~ mock deviled eggs were a hit!
Not only do they look and taste a lot like the original, they take less time since there is no boiling or cooling involved.
this recipe is highly dependant on the shape/size of your “eggs”

Ingredients:
firm tofu – lightly pressed and drained
2 tablespoons veganaise
1/2 tablespoon finely diced yellow onion
1 teaspoon dijon mustard
1 teaspoon yellow mustard
1/4 teaspoon turmeric
1/8 teaspoon paprika plus additional for garnish
Method:
take drained tofu and cut block into halves down the middle – leaving you with blocks of equal thickness ( still the large rectangle). cut into desired shapes, I used an egg shaped cookie cutter but any shape will work. place the left over tofu ( I had approximately 1/4 block in scraps) into a bowl and mash with a fork. add remaining ingredients to taste. sprinkle in turmeric and paprika until desired color is achieved.
to create a well in your shapes ( the center of our egg) scoop out approximately 1/2 tablespoon with a small spoon. fill with mixture and garnish with additional paprika.
