Summer is officially here- yeah! and this month’s Lazy Susan round is all about frozen deserts.
Last year I really got into sorbets since they are light, fresh, fruity and still totally indulgent. This one is for the adults only, something my kids were not thrilled with- ha ha. But sometimes, you do need an adult only desert and this one goes perfectly with our frequent summer taco night. Yup, last night’s dinner was sweet potato and black bean tacos followed by strawberry margarita sorbet and I went to bed one happy mamma.
I hope this will make it into your summer recipe round as well, and remember, this one is ONLY for the grown ups! you deserve it!
Ingredients:
1 cup warm water
1/2 cut turbinado sugar
2 1/2 cups fresh strawberries cleaned and hulled
4 tablespoons fresh lime juice
3-4 tablespoons vegan tequila
2 1/2 tablespoons vegan triple sec
Method:
dissolve sugar into warm water and cool. in a blender or food processor, blend strawberries, lime juice, tequila and triple sec. gradually add the sugar mixture and pour into ice cream maker. garnish with lime and sugar or salt on glass rim.
