Every once and awhile, my husband will treat me to a Sunday morning mimosa. There is something about having bubbly early in the day, with a great brunch, that really makes everything super special. While I certainly enjoy my mimosa time, I felt the need to mix things up a bit for this upcoming spring brunch season. Since I also think mojitos are tons of fun, making them with champagne gives them a lighter taste perfect for brunch!
Ingredients: per serving
fresh mint- 1 sprig
1 tablespoon lime juice
1/2 to 1 tablespoon turbinado sugar ( adjust to sugar content of champagne)
ice
champagne or sparkling wine
Method:
place mint, sugar and lime juice into bottom of glass. muddle with back of spoon until sugar dissolves, fill the glass with ice and then champagne. adjust sugar content based on type of champagne, garnish with lime or mint.
