I saw Al Roker on the Today show ( I love him) this morning talking about his success with a detox diet! I too have had such great success with detox that I am glad you have decided to join me on the Healthy New Year plan and this salad will keep you feeling satisfied and full of energy. The thing is, once you get the hang if it and start looking and feeling great it’s really easy to follow. Choose more whole, clean foods that nourish your body and you are on your way.

Not gonna lie, we love lentils around here. I can make a big batch and we will just use them on anything like pasta, salads, soups or just a bowl of them. The thing is, they are tasty and full of fiber and protein making them a great compliment to our veggie meals. Oh, it’s also quick and easy to it works well with our busy family life.
Ingredients: 2 servings
1 cup cooked lentils * we used brown
1/2 cup grape tomatoes- halved
1/4 cup fresh cilantro – chopped
1/4 cup fresh parsley – chopped
1-2 tablespoons fresh lemon juice
2 teaspoons balsamic – optional
1/2 tablespoon olive oil
1 clove chopped garlic
2-4 cups greens- we used romaine lettuce
Method:
mix all ingredients except greens together in a large bowl, chill if desired. place 1-2 cups greens onto each serving plate and top with half of the lentil mixture. serve immediately.
